Create blob_store and blob placeholders, to mimic what a real SPDK blobstore would do. Then we can set different status values on the blobstore and blobs to return different status instead of just a single global variable for injecting different status values. This is also needed for future tests where we need to have multiple lvolstores at once to test name collisions.
